Stone Barns by Local Projects

I’ve posted about Chef Dan Barber and his Blue Hill at Stone Barns - arguably “the most important restaurant in America” - before, but his philosophy and practices bear repeating. 

Honest and inspiring, with one exception.  I wish they would talk about meat and slaughtering animals.  I’m a meat eater and I pass no judgement, but I wish they would talk about about how that fits into the philosophy.
